We source pork that is pasture raised on Missouri and Kansas family farms without the use of excessive antibiotics or added hormones. They are predominantly Berkshire breed (aka Kurobuta), and though they require extra care in handling, breeding, and feeding, we believe it is worth it to produce high quality pork. Raising hogs on pasture ensures full flavored meat from well developed muscles.
This combined with proper genetics helps to ensure high levels of marbling and fine texture which makes for exceptional pork.
All hogs are processed at a small family owned processing facility in Missouri and can be fabricated to meet your specifications.
